CROCKPOT GAMING: Wilson's Vietnamese Meatballs

Recipe below. I could game for hours on end. The only problem I have encountered with this vice (besides my total resistance to growing up) is food. I love it. Need it. Love making it. But after 6 hours of putting palm to mouse, I have little time for it. UNTIL TODAY. To all the gamers with a soft spot for food: Your days of striking a balance are over. For I present to you. Crockpot Gaming. Crockpot Gaming - Wilson's Vietnamese Meatballs. For the meatballs. 1.5 - 2 lbs Ground Pork. 3 TBSP Hoisin Sauce. .5 C breadcrumbs. fresh ginger (minced). 2-3 scallions (sliced). For the sauce. 1 C Sriracha. .5 C honey. (if you like things a little more sweet, adjust the ratios a bit). For the Bahn Mi sandwich. 1 hero roll (or more if you're feeding friends). 1 cucumber. 2 carrots. mayonnaise. fresh herbs (cilantro, parsley, whatever you like). Combine all meatball ingredients into a bowl. For the scallions, chop up the bottom white parts only. You can save the green tops for garnish later if you like. Mix the ingredients but do not overwork the meat. Out of the mixture, make meatballs that are about 1 inch in diameter. Place in the crockpot. For the sauce, measure out both the honey and sriracha. Combine well in a bowl. Pour over top the meatballs and distribute the sauce with your hands. Place the crockpot on low heat, set the timer for 6 hours and place the lid on the crockpot. If you want the sauce more cooked down, remove the lid about 1 hour before the timer is complete. Once the meatballs are done, it's time for sandwiches. Preheat the oven to 300 degrees Fahrenheit. Cut open the hero rolls and place in the oven to toast for a couple minutes, until the desired degree of toastiness. Using a peeler, peel the outer skins of both the cucumber and carrot and discard the peels. Continue to peel into the cucumber and carrot until you have enough to top your sandwich with. Spread the mayonnaise onto the roll. add however many meatballs you so choose and top with the peeled cucumber, carrots and whatever fresh herbs you decided to go with. Add the green scallions and extra sriracha if you want more flavor. Cut in half and enjoy!. This meal was inspired by Don't Starve Together. And my love for gaming..
